Gajar ki Kheer (Carrot Pudding)

A sweet, creamy pudding made with carrots, milk and almonds. It's the perfect dessert for any special desi occasion like Eid.

Gajar ki Kheer (Carrot Pudding)

This is definitely my husband's most-requested dessert. He is a hardcore desi at heart so it's always gulab jamun, ras malai or kheer over any cakes or cookies. I make 'Gajar ki Kheer' two ways, one is with the box mix and additionally adding fresh carrots sauteed and blended into it, which elevates its taste. And second is this recipe which is made from scratch. Obviously nothing beats freshly made no-box kheer!

Gajar ki Kheer (Carrot Pudding)



  • 300g carrots (peeled and grated)
  • 2 1/4 cups milk
  • 2 tbsp sliced almonds without skin
  • 5 tbsp sugar 
  • 2 small cardamom's seeds
  • 2tbsp ghee/vegetable oil


  1. Take a medium sized pot, in it add the oil. When the oil is heated open the cardamom's and add the seeds in, wait till they crackle.
  2. Put the grated carrots and cook on medium-low heat till the carrots soften and are not raw anymore. Dry any water!
  3. Then add 3/4 cup milk and on low heat cook till the carrots absorb the milk. Put the mixture aside to cool.
  4. When cooled, add everything into a blender along with the almonds and 1/4 cup milk. Blend till smooth. Add some water if it's hard to blend. If you like a grainy kheer you can then skip blending very finely.
  5. Now add the blended mixture into the previous pan and add 1 1/4 cup of milk. Turn on the flame and simmer on low heat till the kheer reaches your desired thickness.
  6. Serve warm or cold, whichever way you like. Garnish with sliced almonds before serving.
