Spinach Pomegranate Salad with Honey Lime Dressing

The combo of red and greens also makes this salad so pretty to look at. To make it more fulfilling, instead of just a side, you can always add eggs, chicken or shrimps. The dressing can be made in advance and stored in the refrigerator. I bought arils from the grocery store instead of deseeding a pomegranate, which makes life so much easier. Peeling pomegranate is something that I don't really look forward to lol!

Spinach Pomegranate Salad with Honey Lime Dressing

INGREDIENTS

For the salad
2 cups baby spinach
1 cup pomegranate
1/2 cup carrots (thinly sliced)
1/2 cup cucumber (diced)
1/2 cup fresh mozzarella (crumbled)
pine nuts

For the dressing
2 tbsp olive oil
1 tsp dijon mustard
2 tbsp lemon's zest
1/4 cup lemon's juice
1 tsp honey
a pinch of salt and pepper

DIRECTIONS

1. Combine the dressing ingredients together and mix until homogeneous.
2. Put the salad ingredients in a large bowl except pine nuts. Add the dressing and give a good toss.
3. Add the pine nuts just before serving else they will lose their crunch.
