Steak with Peppercorn Sauce

A juicy piece of beef steak slathered with a peppery cream sauce which is made with freshly grounded black peppers, heavy cream and broth. 


Steak au Poivre or Pepper Steak is a classic French dish that consists of a delicious piece of beef steak which is accompanied by a creamy pepper sauce. The notes of freshly cracked black pepper add a rich and pungent flavour to this steak dish. Today I am bringing you my take on this Steak au Poivre.

INGREDIENTS

FOR STEAKS
  • 2 beef steaks (each steak around 200-250g)
  • 1/2 tsp salt
  • 1 tbsp ginger garlic powder
  • 1/2 tsp onion powder
  • 1 tsp crushed black pepper
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tbsp dijon mustard
  • 2-3 tbsp oil
  • 2 tbsp unsalted butter
FOR PEPPERCORN SAUCE
  • 20g unsalted butter
  • 1 tbsp olive oil
  • 1/2 onion (minced)
  • 1-3 tsp coarsely grounded black pepper
  • 1/2 cup broth (vegetable/chicken or beef)
  • 1 cup heavy cream

DIRECTIONS

FOR STEAKS
  1. Season beef steaks with salt, ginger & garlic powder, onion powder, crushed black pepper, soy sauce, vinegar and dijon mustard. It's best to marinate them overnight otherwise 3-4 hours will do.
  2. In your pan add the oil and butter. On medium heat cook your steaks, 6-8 mins each side (for well-done).
  3. Take out each steak on a sheet of foil, put a dollop of butter on top and loosely cover it. Let rest for 2-3 mins.
FOR PEPPERCORN SAUCE
  1. For maximum flavour make the sauce in the same pan you made steaks. I, however, prefer to make in a separate pan. Start with melting the butter on medium low heat and add your olive oil.
  2. Put in the minced onion and saute till it looses the rawness. Then add in the crushed peppercorns according to how much heat you like.
  3. Pour in the broth and heavy cream. Mix and taste for salt. Add some if required. On medium heat let the cream thicken. You can also use low-fat cream or half-in-half but it won't thicken like heavy cream. In that case, dissolve around 2 tbsp all-purpose flour in 2-3 tbsp of lukewarm water and pour it in the sauce while stirring continuously.
  4. Place the beef steaks on your serving plate, drizzle some sauce and add grilled vegetables of your choice on the side.

NOTES

  • If you don't eat beef, you can make the same recipe with chicken too. Just be mindful of the cooking timings!
