These Chicken Fajita Sliders are made with slider buns filled with juicy, spiced chicken, sautéed bell peppers and onions, and plenty of melty cheese, all finished with a garlic butter–brushed top. They’re easy to assemble, full of flavor, and perfect for casual dinners or feeding a crowd.
In a bowl, combine the chicken with the seasonings: salt, chili powder, paprika, cayenne pepper, black pepper, onion powder, garlic powder, sugar, dried oregano, cumin, and lime juice. Toss well so the chicken is evenly coated. Set aside while you prep the vegetables.
Heat the olive oil in a wide pan over medium-high heat. Add the marinated chicken and cook for 7-8 minutes, stirring occasionally, until the chicken is fully cooked through and lightly browned.
Add the sliced bell pepper and cook for 2 minutes. Add the sliced onion and cook for 1 minute, just until slightly softened. Do not overcook; the vegetables should stay crisp.
Stir in 1 teaspoon tomato paste with a splash of water and toss once to coat. Remove from heat.
Prepare the garlic butter. In a small bowl, mix melted butter, dried parsley, and garlic powder. Set aside.
Preheat oven to 350°F (180°C). Assemble the sliders. Slice the slider buns horizontally and place the bottom halves in a baking dish. Lay a slice of Chester cheese on each bottom bun. Spoon the fajita chicken mixture evenly over the buns. Drizzle sriracha mayo lightly in a zig-zag over the filling. Sprinkle shredded mozzarella evenly on top.
Place the top buns on and brush generously with garlic butter. Bake uncovered at 180°C (350°F) for 8–10 minutes in the middle rack, or until the cheese is fully melted and the tops look lightly golden

The fajita chicken filling can be made up to 1-2 days ahead and stored in the fridge. Assemble and bake the sliders just before serving for best results.
