These Chicken Fajita Sliders are made with juicy, spiced chicken, crisp bell peppers and onions, and plenty of melty cheese tucked into soft brioche buns brushed with homemade garlic butter. They're easy to make, full of flavor, and perfect for anything from a weeknight dinner to casual entertaining.

This is one of those recipes I keep coming back to, especially when I'm hosting. It uses simple, everyday ingredients, is such a breeze to assemble, and makes feeding a crowd easy without spending hours in the kitchen.

I like serving these cheesy chicken fajita sliders with bold, crowd-friendly sides like masala fries, smashed potatoes, or parmesan-crusted potatoes. They also pair really well with something shareable, like loaded veggie nachos or shrimp tostadas, if you're putting together a relaxed, help-yourself spread.

Key Ingredients
- Bell Peppers: You can use just one color, but mixing a few just looks better.
- Cheese: A melty yellow cheese on the bottom gives a creamy base, while a stretchy cheese like mozzarella on top helps create that perfect cheese pull.
- Buns: Slider buns or mini brioche buns work best here as they stay soft after being baked.
- Sauce: I used sriracha mayo, but garlic mayo, chipotle mayo, or even plain mayo work just as well.
Step By Step With Photos
Here's how to make this Chicken Fajita Sliders recipe with a simple visual guide.

- Make the fajita filling: Cook the seasoned chicken until fully cooked, then quickly sautรฉ the peppers and onion until just tender-crisp.

- Add the filling: Spoon the fajita chicken mixture evenly over the cheese.
- Drizzle the sauce: Lightly drizzle sriracha mayo over the filling.

- Sprinkle mozzarella: Add shredded mozzarella over the filling.
- Close the buns: Place the top halves on.

- Brush garlic butter: Brush the tops generously with garlic butter.
- Bake and serve: Bake at 350ยฐF (180ยฐC) until warm and melty, and serve.

Make Ahead & Storage
The fajita chicken filling can be cooked up to a 1-2 days in advance and stored in the fridge. When ready to serve, assemble the sliders with the buns, cheese, and sauce, then bake just before serving so they stay fresh and melty.
Leftover sliders can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave or air fryer until warmed through.

- ยผ teaspoon cayenne pepper
- ยผ teaspoon ground black pepper
- ยฝ teaspoon onion powder
- ยฝ teaspoon garlic powder
- ยผ teaspoon sugar
- ยพ teaspoon dried oregano
- 1 teaspoon ground cumin

Assembly

- ยฝ cup (60 g) shredded mozzarella
- Sriracha mayo or any sauce of your choice
Garlic Butter
- 2 tablespoon butter melted
- ยพ teaspoon dried parsley
- ยฝ teaspoon garlic powder
Instructions
- In a bowl, combine the chicken with the seasonings: salt, chili powder, paprika, cayenne pepper, black pepper, onion powder, garlic powder, sugar, dried oregano, cumin, and lime juice. Toss well so the chicken is evenly coated. Set aside while you prep the vegetables.
- Heat the olive oil in a wide pan over medium-high heat. Add the marinated chicken and cook for 7-8 minutes, stirring occasionally, until the chicken is fully cooked through and lightly browned.
- Add the sliced bell pepper and cook for 2 minutes. Add the sliced onion and cook for 1 minute, just until slightly softened. Do not overcook; the vegetables should stay crisp.
- Stir in 1 teaspoon tomato paste with a splash of water and toss once to coat. Remove from heat.

- Preheat oven to 350ยฐF (180ยฐC). Assemble the sliders. Slice the slider buns horizontally and place the bottom halves in a baking dish. Lay a slice of Chester cheese on each bottom bun. Spoon the fajita chicken mixture evenly over the buns. Drizzle sriracha mayo lightly in a zig-zag over the filling. Sprinkle shredded mozzarella evenly on top.
- Place the top buns on and brush generously with garlic butter. Bake uncovered at 180ยฐC (350ยฐF) for 8-10 minutes in the middle rack, or until the cheese is fully melted and the tops look lightly golden
- Serve warm and enjoy!
