Mango Iced Tea

ripe mango
diced

black tea bags

fresh raspberries
fresh mint leaves
for garnish
Instructions
Put diced mango, sugar and water in a saucepan. Bring the water to boil.
Simmer for 10 minutes on low heat. Mash the mangoes with a spoon or fork.
Turn off the heat and let sit covered for 30 minutes.
When cooled, strain this mixture so that you are left with mango syrup without the flesh. Discard the flesh and refrigerate the syrup.
Boil the water for tea and add the tea bags. Let simmer for 2 minutes or more, depending on how strong you like your tea. Cool this tea.
Fill two tall glasses or four medium-sized glasses with ice cubes and divide the mango syrup between them.
Then pour in the tea equally.
Add some raspberries and mint just before serving and enjoy the mango tea cold.
Notes
Replace black tea with green tea bags if you prefer a less strong flavor.
Don’t over-steep the tea, or it may turn bitter.
