Peel the second mango and add the flesh to a mini blender. Blend till it's a smooth puree.
Take two tall glasses. Equally divide the lime and mint between the two. Add 2 teaspoon sugar to each glass. Then mash with a cocktail muddler till the lime and mint release their juice.
Add the mango chunks and muddle only lightly so the cubes are not mushed completely. Adding the mangoes after the lime and mint ensures that they keep some of their form.
Top with crushed ice and 2 tablespoon mango puree in each serving glass.
Fill the remaining portion with club soda and give a quick stir.
Garnish with mint sprigs and serve cold!

Adjust the sugar according to the kind of mangoes you use.
If you are using a sweetened soda like Sprite instead of plain sparkling water, than reduce the sugar in this recipe.
