This Four Cheese Mac & Cheese is the ultimate comfort dish with a rich, velvety sauce and a crispy, golden cheese crust. My easy baked version combines cheddar, Gruyรจre, mozzarella, and Parmesan to create the most indulgent mac and cheese you'll ever make. Perfect for cozy gatherings and family dinners!

Best Cheeses for Mac & Cheese

I have used the following for my Four Cheese Mac & Cheese:

  • Cheddar - Adds sharp flavor and a classic mac and cheese color. Use sharp or medium for the best taste.
  • Gruyรจre / Bergkรคse - Brings nutty richness and melts smoothly. Bergkรคse is a great substitute in Germany, and Emmental also works if you prefer a milder flavor. 
  • Mozzarella - Adds creaminess and stretch. Gouda and Fontina also work well and melt beautifully. 
  • Parmesan - Adds salty, savory depth.

Don't have all four cheeses? You can still make it. Use one or two, or swap in whatever you have at home.

Which Pasta To Use

I use cavatappi because its spirals hold onto the creamy sauce and stay firm after baking. Elbow macaroni, shells, pipe rigate, or fusilli also work well since their curves and ridges also catch the cheese sauce. Avoid long or smooth pasta shapes!

  1. Grate all the cheesesย from blocks and divide them as needed for the sauce and topping.ย 
  2. Boilย theย pastaย 2 minutes less than the package instructions so it stays firm after baking.

  1. Melt the butterย in a pot, stir in the flour, and cook it for a couple of minutes.ย Add the seasoningsย and mix well.
  2. Slowlyย pourย in the milkย on low heat and let it thicken.ย Add the creamย and keep stirring until the sauce turns smooth.

  1. Turn off the heat andย stirย in theย cheeseย for the sauce until fully melted.ย Add theย cooked pastaย and coat it well.
  2. Transfer the pastaย into the baking dish and spread it out evenly.

  2. Finish with dried or fresh parsley and serve warm.

Expert Tips

  • Undercook the pasta. Boil the pasta 2 minutes less than package instructions so it finishes cooking in the oven and doesn't turn mushy.
  • Always grate cheese from a block. Pre-shredded cheese contains anti-caking agents that stop it from melting smoothly, causing a grainy or clumpy sauce.
  • Keep the heat low. Overheating the sauce or adding cheese over high heat can make it separate or turn oily.
  • Don't over-thicken the sauce. The sauce should be slightly loose, the pasta absorbs liquid as it bakes, so starting extra thick will make the final dish dry.
  • Stir consistently when making the bรฉchamel, it helps the sauce stay smooth and prevents lumps.

Variations

You can customize this Four Cheese Mac and Cheese with these simple variations:

  • Add some heat - Stir in chili flakes, jalapeรฑos, or a touch of hot sauce for a spicy version.
  • Add mustard - Mix in a small amount of Dijon or mustard powder for extra sharp flavor.
  • Add protein - Fold in cooked chicken, rotisserie chicken, or turkey bacon for a heartier dish.
  • Crunchy topping - Mix panko with a little butter and sprinkle on top before baking for an extra crisp finish.

Can you make this Four Cheese Mac and Cheese ahead of time?

Yes. Assemble it, cover, and refrigerate for up to 24 hours. Add the cheese topping just before baking and then add 5 to 10 minutes to the bake time since it will be cold.

How do I store leftovers?

Cover the dish tightly with cling film or store leftovers in an airtight container in the fridge for 3 to 4 days.

How do I reheat it?

Reheat in the oven at 300ยฐF (150ยฐC) until warmed through. Small portions can also be reheated in the air fryer. The microwave works if you're short on time, but it won't heat evenly throughout and the texture won't be as good as the oven or air fryer.

Can I make this without an oven?

Yes. Skip the baking step and serve it as a stovetop mac and cheese. It will be creamy but without the crispy top.

How do I prevent a grainy or clumpy cheese sauce?

Use freshly grated cheese and keep the heat low when adding cheese. Adding cheese over high heat can cause it to separate.

Ingredients

  • 10.5 oz (300 g) cavatappi
  • 1ยผ cups (125 g) sharp cheddar block shredded
  • 1ยผ cups (125 g) Gruyรจre (or Bergkรคse) block shredded
  • 1ยผ cups (125 g) mozzarella block shredded
  • 1 cup (100 g) Parmesan block grated
  • 2 tablespoon (28 g) unsalted butter
  • 2 tablespoon (16 g) all-purpose flour
  • ยฝ teaspoon salt
  • ยฝ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian herbs plus extra for topping
  • 1 teaspoon white pepper
  • 1 teaspoon chicken bouillon powder
  • 1ยฝ cups (360 ml) whole milk
  • 1 cup (240 ml) heavy cream
  • ยฝ teaspoon dried parsley garnish

Equipment

  • 1.5 to 2 quart casserole dish ~1.4 to 1.9 liter baking dish

Instructions

  • Freshly grate all the cheeses. Combine the cheddar, Gruyรจre, and mozzarella in one bowl, then divide this mixture into two portions: set aside 1ยฝ cups (about 150g) for topping and use the remaining portion for the sauce. Divide the Parmesan separately into two equal halves, one half for the sauce and the other half for topping.
  • Bring a large pot of salted water to a boil. Cook the cavatappi 2 minutes less than package instructions so it stays firm when baked. Time it so you can add it directly into the sauce.
  • In a deep pot, melt the butter over medium heat. Add the flour and cook for 2-3 minutes, stirring constantly, until it smells nutty.
  • Mix in the salt, smoked paprika, garlic powder, Italian herbs, white pepper, and chicken bouillon powder. Cook 1 minute to bloom the spices.
  • Reduce the heat to medium-low. Slowly whisk in the milk until smooth and thickened. Then add the heavy cream and cook until the sauce thickens slightly, about 3-4 minutes.
  • Turn off the heat (or keep on the lowest setting). In portions, add the mixed cheeses reserved for the sauce. Stir continuously until completely melted and smooth.
  • Then mix in the Parmesan. Loosen the sauce with around ยฝ cup of pasta water.
  • Add the cooked cavatappi to the sauce and toss until everything is well coated.
  • Transfer the pasta into a 1.5 to 2 quart casserole dish (I used approximately 1.6 liters). Sprinkle a pinch of Italian herbs over the top. Add the remaining Parmesan and the mixed cheese reserved for topping.
  • Bake in a preheated 350ยฐF (175ยฐC) oven for 20-25 minutes. Broil for the last 3-4 minutes until golden and bubbling.
  • Remove from the oven and sprinkle with dried parsley. Let the dish rest 7-10 minutes before serving.

  • Makes 6 to 8 servings if served as a side, or 4 servings as a main dish.
  • Use freshly grated cheese for the smoothest sauce. Pre-shredded cheese contains anti-caking agents and won't melt well.
