What Is Lotus Biscoff
Lotus Biscoff is a Belgian cookie brand known for its thin, crispy caramelized biscuits with distinctive cinnamon-spice flavor. Originally served with coffee, these cookies gained worldwide popularity and expanded into spreads, ice cream, and other products.
Biscoff spread, made from crushed cookies, has the same delicious flavor in a smooth, spreadable form, making it a versatile ingredient for desserts and drinks.

Ingredients & Substitutions
Here's what you'll need for the Lotus Biscoff Milkshake recipe. See recipe card for quantities.
- Biscoff Spread - For this milkshake I use the 'smooth' spread but you can use 'crunchy' too.
- Ice Cream - I prefer the Biscoff ice cream but you can replace with vanilla ice cream. To make the shake less rich you can also skip it entirely.
- Milk - Use your choice of milk. I used full-fat milk.
- Sugar (optional) - If you like your drinks ultra sweet add some brown or white granulated sugar.
- Garnish (optional) - Biscoff cookies and whipped cream are for decoration only.
How To Make Biscoff Milkshake
- Blend: Blitz milk, ice cream, Biscoff spread and ice cubes till smooth.
- Decorate: Drizzle melted cookie spread inside the milkshake glasses, smear some of the spread on the top edges of the glass and press crushed Biscoff cookies on it.
- Assemble: In the glass, pour Biscoff shake, add whipped cream, drizzle melted Biscoff spread and top with a cookie.
- Serve: Enjoy cold!
Tips for the Best Biscoff Milkshake
- Adjust the Thickness: Add more milk for a thinner shake or less for a thicker, spoonable texture.
- Chill Your Glasses: For an extra refreshing drink, pop your glasses in the freezer for a few minutes before serving.
Variations
- Coffee Kick: Add a shot of espresso for a Biscoff latte-style milkshake.
- Chocolate Lover’s Version: Swap vanilla ice cream for chocolate ice cream to create a rich, chocolatey twist.
- Dairy-Free Option: Use dairy-free ice cream and almond, oat, or soy milk for a plant-based version.
- Warm Spice: Sprinkle a pinch of cinnamon or nutmeg into the mix to enhance the warm notes of the Biscoff.
