- Chicken - Boiled and shredded breast, or use rotisserie/leftovers.
- Sauce - I used chipotle, but sriracha mayo, buffalo ranch or my Dynamite Sauce work too.

- Make the filling by combining shredded chicken, veggies, seasonings, sauce, yogurt, and cheddar cheese.
- Butter the bread slices and lightly toast them in a heated pan.


- Add the chicken filling on the toasted side of each slice.
- Top with mozzarella and close the sandwich, keeping the toasted side inside.


- Butter the outside and toast on medium-low heat until golden, flipping once.
- Slice and serve warm with chips and extra sauce.
PRO TIP: Toast low and slow. Keep the heat at medium-low and cover the pan while toasting. This give a golden, crisp crust without burning the bread, while the cheese inside has enough time to melt properly.

- Protein - Swap chicken with turkey, tuna, or even leftover roast beef.
- Cheese - Try gouda, Monterey Jack, or pepper jack for a different flavor.

Hot and Cheesy Chicken Melt
Ingredients
- 1 (200-250 g) chicken breast boiled and shredded
- ¼ teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon crushed red pepper flakes
- ½ cup chipotle sauce see note
- 1 tablespoon Greek yogurt
- 2 tablespoon fresh chives chopped
- ½ red onion diced
- ½ (~50 g) carrot peeled and grated
- ½ cup cheddar cheese shredded
- Mozzarella cheese as needed
- Butter as needed
- 8 slices sandwich bread
Instructions
- In a bowl, mix together the shredded chicken, salt, black pepper, crushed red pepper, chipotle sauce, Greek yogurt, chives, red onion, carrot, and cheddar cheese until well combined.
- Spread butter on one side of each bread slice. Place the slices butter-side down in a heated pan or griddle and lightly toast.
- Flip the bread, then spread the chicken mixture generously over the toasted side. Top with mozzarella cheese, then cover with another slice of bread (toasted side facing the filling).
- Spread a thin layer of butter on the outside of the sandwich. Toast over medium-low heat for 3-4 minutes per side, until the cheese is melted and the bread is golden and crisp. Cover the pan if needed to help the cheese melt.
- Remove the chicken melt from the pan, slice diagonally, and serve warm with chips and extra chipotle sauce on the side.

- You can swap the chipotle sauce with any creamy hot sauce of your choice, like sriracha mayo, peri peri mayo, buffalo ranch, or try making my homemade Dynamite Sauce.
- The chicken filling can be stored in the fridge for up to 2 days. Assembled sandwiches also keep well for 2 days in an airtight container. Reheat in a skillet or air fryer until the bread is crisp and the cheese melts again, avoid microwaving as it makes the bread soggy.
