Crispy, fried shrimp coated in a spicy mayonnaise dressing! This Japanese appetizer is a very sought-after item. Made in 20 minutes these dynamite shrimp are easy, fun and super addictive.

I have visions of my recent Dynamite Shrimp swarming in front of my eyes while writing this recipe. And I am half tempted to once again make a fresh batch of these glorious crispy shrimp dressed with an even more glorious creamy sriracha dressing.

What Is Dynamite Shrimp

It is a Japanese appetizer comprising of battered shrimp coated in a mixture of mayonnaise and sriracha sauce. This dish is also a very popular item on PF Chang's menu, which is an Asian restaurant in America and has its branches all around the world.

Dynamite Shrimp Sauce

  • Mayonnaise: This is the base of this sauce and will make this dressing creamy.
  • Sriracha Sauce: You can use any hot sauce. The more you sriracha you add the spicier and darker your dressing will get. I suggest you start with 1 tablespoon and increase from there.
  • Honey: I add a little bit of honey to balance the sharpness of this sauce.
  • Tomato Ketchup: It adds a hint of sweetness while helping us achieve a dark orange colour without adding too much sriracha sauce.

How To Make Dynamite Shrimp

  1. The Marination: After cleaning the shrimp add the egg and spices to it. Keep aside for a couple of minutes only.
  2. The Dredging: Prepare the flour mix to coat the shrimp. Using tongs dredge shrimps with flour and shake off excess.
  3. The Frying: Deep-fry shrimp on medium-high heat till golden and crispy. Shrimp does not take too long to cook and will get hard and rubbery if cooked longer.
  4. The Sauce: Mix the Dynamite Sauce ingredients and toss the fried shrimps in this dressing. Garnish with spring onions or chives, black and white sesame seeds. The sesame seeds are optional but I think they look quite nice. 

Can You Make It In Advance

You can prepare the sauce and keep in the fridge for 3 days. As for the shrimps, they are best when fried fresh. They will lose their crunch if kept in the fridge. If you still want to store or prepare in advance. You can reheat them in your airfryer, oven or microwave but they won't be as crispy.

Can You Make This With Chicken

You can easily swap the shrimp with prawns or chicken. With chicken the frying time will vary and I'd also suggest to increase the seasoning in the marination if using chicken.

Dynamite Shrimp

Ingredients

  • 250 g shrimp shelled and deveined
  • cooking oil for deep frying
  • ¼ teaspoon red chili powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt
  • 1 tablespoon soy sauce
  • 1 small egg

COATING

  • ½ cup all-purpose flour
  • ¼ cup cornflour/cornstarch
  • 1 teaspoon garlic powder
  • pinch salt

SAUCE

  • ½ cup mayonnaise
  • 2-3 tablespoon sriracha sauce
  • 2 teaspoon honey
  • 1 ½ tablespoon tomato ketchup

GARNISH

  • lettuce
  • spring onions or chives chopped
  • black sesame seeds
  • white sesame seeds

Instructions

  • Prepare the sauce by stirring mayonnaise, sriracha sauce, honey and tomato ketchup together and keep aside.
  • To the shrimp, add red chili powder, salt, paprika powder, soy sauce and egg. Mix well.
  • Prepare the dredging mix by combining all-purpose flour, cornflour/cornstarch, salt and garlic powder.
  • Heat oil for deep-frying.
  • Using a tong, coat each shrimp with the flour, shake off excess and drop in the hot oil.
  • Fry on medium high heat till it turns golden and crispy (around 3-4 minutes).
  • Remove into a sieve to drain off excess oil. Let cool slightly.
  • Add the fried shrimp to a bowl. Pour the sauce and toss until the shrimps are nicely coated.
  • In a small bowl or glass put some lettuce on the bottom, add the shrimps and garnish with chopped green part of spring onion (or chives), black and white sesame seeds.
  • Serve immediately!

      Thank you! You can use either. In case of precooked, fry them on medium-high heat for 2-3 minutes and take them out as soon as their coating gets golden and crispy.
