Creamy Baked Garlic Pasta with Sausage

With sausage and olives this spiral pasta is tossed in a creamy white sauce fragrant with garlic and then baked with grated mozzarella until it is golden and bubbly on the top.

Nothing like a pasta that is oozing with cheese and smells of roasted garlic. This combo is just so heavenly! This pasta dish is bursting with flavours and is so, so creamy and rich. Make it for dinner with a side of garlic bread and that's it! 

The sausage in it can be replaced with boneless chicken or shrimps. I love how sausage tastes with baked pasta plus it takes less prep time as compared to chicken. The olives are totally optional you can use mushrooms, capsicum, broccoli whatever you have on hand or like instead.

Anyways, fortunately or unfortunately I am not the one to talk about my entire day before posting a recipe lol. So let's get to what you all are here for - the recipe.

  • 1 cup unboiled pasta
  • 2 sausage (sliced)
  • 1/4 cup black olives
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • 4 cloves garlic (finely chopped)
  • 1/4 tsp salt
  • 1/2 tsp white pepper
  • 1 cup milk
  • 1/2 cup chicken stock
  • 2 tbsp full-fat cream (optional)
  • 1/2 cup mozzarella cheese (grated)
  • 1/2 tsp dried oregano leaves

  1. Boil the pasta as per packet instructions and keep aside. I used spiral pasta (fusilli) but you can use any other form too.
  2. This step is totally optional. Slightly pan-fry the sliced sausages. Keep aside.
  3. In the same pan, in the leftover oil add the garlic on medium heat and cook for 1 minute.
  4. Then add butter and as soon as it melts add the flour. Stir and cook for 1-2 mins.
  5. Then add in the salt and white pepper.
  6. Away from the stove, put in the milk and chicken stock. Mix well till the flour is completely dissolved and there are almost no lumps.
  7. Then put the pan back on the stove. Cook on medium heat for a few minutes until the sauce starts to thicken. Don't thicken it too much!
  8. Add the cream and give a good mix. Cook for 2 minutes.
  9. Then add in the boiled pasta, olives and sausages. Stir.
  10. Pour everything into an oven-safe dish and sprinkle the top with cheese and oregano leaves.
  11. Bake for 10 mins in a preheated oven at 200 C. As soon as the cheese melts and turns golden, take it out.
  12. Serve immediately with garlic bread.
