Virgin Strawberry Pina Colada

This non-alcoholic drink combines the goodness of Strawberry Daquiri and Pina Colada into one. Made with fresh pineapples, pineapple juice, coconut milk and strawberries this gradient Strawberry Pina Colada will transport you to a tropical beach.

Pina Colada originated in Peurto Rico and is usually made with rum. The strawberry variation is called Lava Flow which has a slush-like strawberry base, that is topped with the Pina Colada drink making it look like as if a lava is flowing. It's a very popular drink in Hawaii.

My version is of course without alcohol, incredibly tasty and perfect to beat this Summer heat. It's an ideal drink for parties or picnics which the entire family can sip and enjoy.

How To Make Virgin Strawberry Pina Colada

  • Make strawberry base. Blend together strawberries and pineapple juice to a thick slush-like consistency.
  • Make Pina Colada. Blend together pineapple juice, coconut milk, fresh pineapple and ice cubes till smooth.
  • Combine. Pour some strawberry slush at the bottom of the glass. Fill one fourth then pour the Pina Colada till the glass is full. Swirl with a straw or toothpick slightly if the gradient is not showing.
  • Garnish and serve. Add a pineapple wedge and strawberry to the rim of the glass and enjoy!

Expert Tips And Tricks

  • Use frozen pineapple chunks instead of ice to avoid diluting your drink.
  • You can also use cream of coconut in place of milk for a richer, creamier taste.
  • I made the strawberry slush in my Nutri Ninja Smoothie Maker (affiliate link) and the Pina Colada drink in the blender it comes with. If you are using the same blender for both parts, then after making the strawberry slush wash the blender before proceeding with the coconut drink or it will be all coloured.

Ingredients

  • 1 cup fresh pineapple
  • ½ cup ice cubes
  • ¾ cup pineapple juice
  • ¾ cup coconut milk
  • 1-2 tablespoon brown sugar optional

FOR STRAWBERRY BASE

  • 1 ½ cup strawberries
  • ¼ cup pineapple juice

Instructions

  • First make the strawberry base by blending fresh strawberries and pineapple juice till smooth and creamy. Pour it in a separate jug.
  • Rinse the blender and add the fresh pineapple, ice cubes, pineapple juice and coconut milk. Blend till smooth.
  • Pour the strawberry base in a tall glass till it's 25% full. Top with the coconut and pineapple drink the rest of the way. Swirl around slightly with a straw or skewer if the gradient is not prominent.
  • Garnish with a pineapple wedge and strawberry. Enjoy!

Notes

  • Don't skimp on strawberries. The more strawberries you use, the redder your base will be. If the strawberries are not sweet you can add some additional brown sugar to the base.

    This is SOOO DELICIOUS!! Just got back from Maui and wanted to recreate the Virgin Lava Flow I had at Dukes. This recipe is very similar. I substituted coconut cream for coconut milk and oh my! The family sang my praises! Haha

    Could you substitute coconut milk for regular milk? Have a child that can't have coconut due to allergies.

      Hi, sure you can! But it won't taste the same as Pina Colada has a distinct coconut flavour.

    For pineapple water, can I make that at home? By just blending pineapples? I have a big pineapple and would prefer to just use it all in one go as opposed to going out and buying a separate pineapple juice carton!

      Also! What kind of coconut milk is best? the SILK brand carton/refrigerated coconut milk or the canned ones?

        The canned ones are the best as they are thicker in consistency.

      You can use blended pineapple but it will not be as smooth as the juice.
